Baking Mat

Baking Mat will change you baking life forever!! I have never used one before but my little cousin was selling stuff for school and I bought one. Best 8.00 i have ever spent!  I made cookies for my daughters high school teachers this week and never wiped it off in between batches or anything the cookies were perfect!!!  Love love. I will be buying a couple more!
 

Healthier Egg & Cheese Biscuit

So today I really wanted an egg and cheese biscuit from McDonalds BUT I can not tell you when the last time I have ate one from there was!  I try to stay away from that!  I had a busy week and this morning was just as busy!  Woke up with my back killing me, i got the kids all ready for school and everyone was on time might I add then I came home and got ready to take my mother in law to physical therapy. Took her and came back home for just a bit made my shakeology and grabbed my office work notebook and went back ready to pick her up!  Well I was still thinking about that dang biscuit!  Took her home went to the chiropractor and then finally home after noon sometime well i was hungry so i made this egg biscuit. I put two eggs in my blender with some avocado, slice of zucchini and a little bit of milk. Blended it put it in my pan. Made my biscuits (frozen ones) cut the biscuit in half added half the egg and some shredded cheese and placed the lid on!!  So good!  Well i told my kids about it and they wanted to try it!!  Needless to say kid tested and approved!!

Ingredients
Eggs
Little milk
Salt and pepper
Avocado (just a slice)
Zucchini (just a slice or two)
Shredded cheese
Biscuit

Blend eggs, avocado, milk, zucchini together
Cook the egg mixture and place on biscuit that is cut in half add the cheese and you have a yummy breakfast

Pot Roast

The best ever pot roast!!  Melt in your mouth!!!  Husband and kid approved!! This is one of Pioneer Woman's recipes!!!  I just love her!!

I cooked mine for 4 hours and it was 4.59 pounds. Her instructions say 4 hours and 15 minutes for 3-5 pounds.

Ingredients

Salt & freshly ground black pepper
Garlic Powder (i used this but it is not on her recipes)
Lipton onion soup mix ( another item i added but she doesnt use)
2 or 3 tablespoons of olive oil
2 whole onions peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2 inch pieces ( i sliced mine with my mandolin)
1 cup red wine ( i didn't use)
3 cups of beef broth
2 or 3 sprigs of fresh rosemary ( i didn't use)
2 or 3 sprigs of thyme ( i didn't use)

Directions
Preheat the oven to 275 degrees

Salt, pepper, & garlic roast

Heat olive oil in a large pot or dutch oven over medium high heat.  
Add the onions and brown them then put in a bowl for later
Add the carrots and do the same this usually takes a minute or so. Add carrots to bowl with onions.
Add more olive oil if needed.  Add the roast and sear the meat on all sides. Add beef broth, lipton onion soup mix, onions, & carrots. 

Place lid on the pan and place in the oven!
Roast should fall apart when it is done

4 hours later and you will have a delish meal!!  I made the mashed potatoes in a bag because i can not make those to save my life.  Everyone complains that there is lumps so i just use what is easy
The roast was made homemade so that counts right :)!!!!!

Buy a Produce basket


If you have a local produce coop basket I would definitely sogn up!!  Some places have home delivery places that don't charge much but we don't have that here. We have community helpings coop basket and we pick our basket up at our local library!!!  Check the website out and see if there is a delivery close to you!!  You won't be disappointed!  Most comes from schnucks or dierbergs farms if they can it will be from local farms as well! This is what was in our regular box and junior box
