Spicy Buffalo Chicken Sliders (Trisha Yearwood recipe)
I buy a rotisserie chicken to save time and my girls love these!!! It's easy and tasty!
Ingredients
Chicken:
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup your favorite hot sauce or wing sauce, such as Tabasco Buffalo
2 tablespoons ranch dressing mix, from packet, such as Hidden Valley
1 rotisserie chicken, skin removed, meat pulled
Spicy Slaw:
One 2-pound green cabbage, thinly sliced
2 to 3 shredded carrots (about 1 cup)
2 ears corn, kernels removed, quickly sauteed in a pan
1 bunch green onions, white and light green parts only, thinly sliced
1/4 cup finely chopped chives
1 small red bell pepper, seeded and small diced
1/3 cup red wine vinegar
2 tablespoons honey
2 tablespoons whole-grain Dijon mustard
Zest and juice of 1 lime
Pinch crushed red pepper flakes
1/2 teaspoon hot sauce, such as Tabasco
Kosher salt and freshly ground black pepper
1/3 cup olive oil
8 slider buns, toasted

Bacon Ranch Chicken Paninis (Pioneer Woman Recipe)
My Family Loves these!!!
Ingredients
2 chicken breasts, each cut in half through the middle to make 2 thinner breasts
5 tablespoons butter, softened
1 tablespoon canola oil
Spicy mustard, for spreading
8 slices crusty French bread
Ranch dressing, homemade or bottled, for spreading
8 slices sharp Cheddar
8 slices cooked bacon

Fry the chicken breasts in 1 tablespoon butter and the canola oil in a skillet over medium-high heat until done in the middle, about 8 minutes. Set aside.
To assemble the sandwiches, spread a generous amount of mustard on half of the bread slices. Spread a generous amount of ranch dressing on the other half. (Definitely be generous; when the sandwiches cook, these will turn into more of a "sauce.")
On the ranch-covered slices of bread, place a slice of cheese, a piece of chicken, 2 slices of bacon and a second slice of cheese. Top each with the mustard-covered slice of bread. Butter the outsides of the bread generously with the remaining 4 tablespoons butter, then grill in a panini maker. (If you do not have a panini maker, you can grill the sandwiches in a skillet, laying a heavy skillet on top of the sandwiches to press them together. Turn to grill the other side in the same way.)
Slice the sandwiches in half and gobble them down immediately.

Life in the Worthen House
It has been a crazy summer but a fun one!! We were so excited that school was out and we enjoyed the first couple of weeks of sleeping in and really not having much of a schedule!! Then Upward Bound started for Josie and it was weeks full of getting her to school by 7! Bailee and Reganne enjoyed sleeping in and playing xbox! We also had a fun filled summer of swimming!! Josie and Mark finished Upward Bound with a trip to St Joseph, MO then their summer started! We went to Nashville Tennessee for my Beachbody Coach Summit and then off to Disney World!! We had so much fun! We visited Star Wars at Hollywood Studios and Mickey and Minnie at Magic Kingdom!! Reganne loved meeting the princesses! I rode the Tower of Terror and oh my goodness it has been a a long time since I rode a amusement park ride. I had forgot about the thrill and the panic that comes with it lol All I could think was this is it I am flying out the window when it goes to the top before it drops because my seat belt was so loose and I just felt like I was flying out!! lol I suppose that is what is suppose to happen but boy had I forgotten what the lose your stomach feeling felt like!!! I think I peed my pants at one part ha ha!!! Would I ride it again? yeah probably but I would probably sit further in the back we was in the front row!!!! The picture they took was me looking at Bailee as she is telling me to hold on we are going down and I have a panic look and I am saying WHAT!! I totally should of bought the pic it was priceless lol
I will add more photos but we had a blast!! The kids already want to go back but I am thinking like during a cooler time period! It was so hot!
Flank Steak
I have used flank steak for fajitas and roll ups!! It is an awesome meat choice for cooking quick!! Sometimes too quick if you don't watch it!! I found this one on Melanie Mitro's blog! If I find a recipe and sometimes i tweak it to fit my family and sometimes it is perfect!! This one other than the Mrs Dash seasoning I have made before I found it on Pinterest. It was really good but I am curious to try the Mrs Dash!!
Flank Steak: This is one of the leanest red meats that you can buy. We buy our flank steak at Costco and have been very pleased.
Ingredients:
Flank Steak
Fiesta Lime No Salt Added Mrs Dash Seasoning
Extra Virgin olive oil
Garlic Cloves Minced
Directions:
Take the fresh Flank Steak and place in Ziplok bag, drizzle with EVOO, Sprinkle with Mrs. Dash Fiesta Lime Seasoning and add 2 minced garlic cloves and massage into the Steak. Let sit for 15 minutes. Then, place on grill or stove top pan on Medium High until it reaches the desired doneness. Slice and serve.
Green Beans: Place fresh green beans in a steamer and steam until tender to your liking. Add a drizzle of EVOO and sea salt and pepper.
Potatoes: I take the small potatoes and slice them down to potato chip size. Then I drizzle with EVOO and Low Sodium Taco Seasoning and toss to coat. Place in oven at 350 degrees until chips reach their desired doneness!
Slow Cooker Mexican Chicken
This is a new dish that I have not tried!! I found it on another blog Melanie Mitro and it looks like it will be delicious!!! Let me know if you try before i do Thursday!!!
Ingredients
• 4 boneless, skinless chicken breasts
• 1 cup / 240 ml black beans
• 1 cup / 240 ml corn kernels (fresh or frozen)
• 1 small jar salsa (your favorite variety)
• 1 Tbsp / 15 ml cumin
• 1 Tbsp / 15 ml chili powder
• 2 cups / 480 ml cooked brown rice
Preparation
- Add to slow cooker: chicken breast, beans, corn, salsa, cumin and chili powder. Mix and cook on low 8 to 10 hours. Serve with cooked brown rice.
To make a creamier version, add ½ cup / 120 ml plain Greek yogurt the last 30 minutes of cooking.
Oven Baked BBQ Pork Steaks
This is hands down my favorite way to make pork steaks! I have tried them in the crockpot but my kids were not thrilled with it!! This is super easy and delicious!!
Ingredients
- Package of Pork Steaks ( i got for one with 5-6)
- BBQ Sauce (we love Sweet Baby Rays)
- Sea Salt, Pepper, Steak Seasoning (I use weber) & garlic
Directions
Preheat oven to 375
Season both sides of the pork steaks and brush BBQ sauce on both sides as well
Place on baking sheets ( you can line them with whatever you like to use) bake for 1 hour in the oven and TaDa!!! Delish and tender!!
I will serve these with baked beans, baked potatoes, green beans or salad!!
Kid and Husband approved!!!!
